Given that a good portion of the world just celebrated a holiday that involves baskets full of candy and a bunny that hides eggs with even more sweet stuff inside, I figured we could all use a little something to help detox the Cadbury eggs and
vanilla cupcakes
we inhaled on Sunday.
Truth be told, I’m not a fan of typical detoxing or juicing. I’m a firm believer that the body needs roughage. And after going on a three day juice cleanse a few years ago, I decided I’d rather enter a hot dog eating contest (I don’t even eat hot dogs, or meat for that matter) than willingly go on another juice cleanse. But that doesn’t mean you can’t still detox with real foods that are packed with good-for-you fats and antioxidants and a laundry list of vitamins that will put your daily supplement to shame.
This smoothie is just barely sweet. If you prefer your smoothies to be on the sweeter side, add half a banana. For a lower fat version that will still keep you satisfied, replace the cashews with 1/4 cup of rolled oats (they’ll need to be soaked for 30 minutes, too). If you don’t have frozen bananas hanging out in your freezer, add a handful of ice cubes to the recipe and mix according to the instructions. If you don’t want to use carrot juice, simply replace it with almond milk (or your favorite non-dairy milk). For a thicker smoothie, use only 1/4 cup of almond milk; for something a bit thinner, use the full 1/2 cup.
Your New Favorite Breakfast Smoothie
Makes 1 16-20 ounce smoothie
- 1 frozen banana
- 1/2 cup frozen blueberries
- 1/2 cup frozen chopped kale
- 1 big handful baby spinach leaves (about 2 cups loosely packed)
- 1/4 cup raw cashews, soaked 30 minutes
- 1/4 cup carrot juice
- 1/4-1/2 cup unsweetened vanilla almond milk
- Juice from half a lemon, optional
Add all ingredients to the base of your blender and mix until combined. If you’re using a high powdered blender, such as a Vitamix, the smoothie will come together within 20-30 seconds. If you’re using a standard blender, it could take up to a minute and a half to get everything nice and smooth. Pour smoothie into a glass and enjoy.
